Cheese cake flavoured with lime and sweet kiwi fruit preserve

  • kiwi fruit
  • granulated sugar
  • icing sugar
  • butter
  • petit beurre biscuits
  • dairy cream
  • Katiki Domoku (or other cream cheese)
  • lime


Peel and cut the kiwi fruit into large cubes (or strips if preferable). Place them in a saucepan, weigh and add an equal amount of sugar, bring to the boil and cook until the syrup is thick and the fruit has the consistency of preserve. Allow the butter to melt at room temperature and crush the petit beurre biscuits. Mix the butter and biscuit crumble to form the pastry base and lay it out in a pie dish. In a bowl, toss the dairy cream, Katiki Domokou cream cheese, the icing sugar, and grated lime peel and juice. Spread onto the pastry base and refrigerate. Serve with the kiwi sweet fruit preserve.
